Fellowship of the Unashamed

My girlfriend Sandy gave me this and I think it is so right on. I hope I always live life like this.



FELLOWSHIP OF THE UNASHAMED
I am a part of the "Fellowship of the Unashamed." I have Holy Spirit power. The die has been cast. I've stepped over the line. The decision has been made. I am a disciple of His.
I won't look back, slow down, back away or be still. My past is redeemed, my present makes sense, and my future secure. I am finished and done with low living, sight walking, small planning, smooth knees, colorless dreams, tame visions, mundane talking, chintzy giving, and dwarfed goals!
I no longer need preeminence, prosperity, position, promotions, plaudits, or popularity. I don't have to be right, first, tops, recognized, praised, regarded, or rewarded. I now live by presence, learn by faith, love by patience, live by prayer, and labor by power.
My face is set, my gait is fast, my goal is heaven, my road is narrow, my way is tough, my companions few, my guide reliable, my mission clear. I cannot be bought, compromised, detoured, lured away, turned back, diluted, or delayed.
I will not flinch in the face of sacrifice, hesitate in the presence of adversity, negotiate at the table of the enemy, pander at the pool of popularity, or meander in the maze of mediocrity.
I am a disciple of Jesus. I won't Give up, Shut up, Slow up until I've Preached up, Prayed up, Stored up, and Stayed up for the cause of Christ. I must go till He comes, give till I drop, preach till all know, and work till He stops. And when He comes to get His own, He'll have no problems recognizing me . . . my colors will be clear!

Winter Salad with Fruit 

1/2 cup white sugar
1/2 cup lemon juice
2 t diced onion
1 t Dijon Mustard
2/3 cup Vegetable oil
1 T poppy seeds (opt)
1 large or 2 small head romaine lettuce, torn into bite size pieces
4 oz shredded swiss cheese
1 c cashews
1/4 dried cranberries
1 apple - peeled, cored and diced
1 pear - peeled cored and slice
Mix first seven ingredients together in a blender.  Toss all salad ingredients together and add dressing right before serving.   I don't use the poppy seeds in my dressing.  They get in your teeth and no one will tell you - right?

The LSU vs. Auburn Tailgate

Well this was probably the biggest tailgate to date.  Lots of old friends and a whole lot of new friends.  We are now the official Church of the Highlands Auburn tailgate spot and probably the largest small group with the most guest!

Menu for this tailgate was "Fried catfish, Fried shrimp and Chicken on a Stick".  We had tons of side dishes.  Here are a few with the recipes.  Hope you enjoy.

Fruit Salsa with Cinnamon Chips

2 Granny Smith apples - peeled and diced
2 Kiwi - diced
1 lb. diced strawberries
6 oz fresh raspberries - sliced
2 T white sugar
1 T brown sugar
3 T strawberry perserves (any perserves works)

Mix fruit together, mix sugar and perserves under well blended.  Stir gently to coat fruit.  Refrigerate for a few hours

Cinnamon Chips

Flour tortillas
Butter flavored Spray (like Pam)
Cinnamon sugar (about 2 cups)

Spray tortilla with spray - sprinkle cinnamon sugar.  Turn and repeat on other side.  Cut  into pieces (big enough to scoop salsa).  Lay single layer on baking sheet and bake at 350 under lightly brown.   Cool.

Menus/Recipes

I hope to plan menus and post recipes on this blog.  I have been cooking since I was small.  I had a mom, mother-in-law and father-in-law as great cooks.  Please let me know if you like what you find and if you are looking for a recipe.  Who knows, I may have it in my collection.  We are simple cooks with simple recipes and menus.  Don't expect anything fancy or difficult here!  Happy eating and God bless you.
